Our words matter, our voices matter…

So excited to share some of my friend, co-worker, fellow dancer and vegan cooks, Cinzia and Asif!
It’s time for a frittata!
And TWO versions, Indian and Italian! Because that is how they roll!
And I’m sharing the whole recipe here for you…and a special treat with some Caravan Project Italia tribal bellydancers and drumming! Woo hoo…
Indian v/s Italian Plant Based Frittata
Ingredients for 2 Frittata’s serving 4
200 gr Chickpea Flour
1 ¾ flat tsp baking powder
1 flat tsp turmeric
Salt to taste
½ flat tsp asafoetida powder (optional to aid digestion)
400 ml Water to combine the batter
2 TBSP of Extra Virgin Olive Oil + Extra for frying
Extra ingredients for the Italian version
A handful of chopped zucchini or broccoli florets
½ bell pepper chopped in small pieces
½ vegan stock tube
5/6 fresh basil leaves or a handful of chopped parsley
Extra ingredients for the Indian version
100 gr Green Peas
1 small shallot – finely chopped
2 cloves of garlic – finely chopped
1 piece of ginger (equal to the garlic quantity) – finely chopped
1 tbs cumin seed
½ tbs Garam Masala or Kashmiri Masala if you like it spicy
One fresh green Chilli for extra spice – finely chopped
Put the all the dry ingredients into a large mixing bowl then gradually add the water, whisking continuously, until you get a loose thin batter. You’re ready !!!!
If you are doing the Indian version add the powdered spices and cumin seed into half the batter mix.
Cooking the Frittata
Put a frying pan on a medium (two if you’re doing both Indian and Italian) and wait until they are hot. Turn on your grill to a high heat.
For the Italian version:
When the frying pan is hot turn it up to a medium high heat and add 4 Tbsp of oil, add the vegetables, crumble the ½ stock and sauté everything until the vegetables are just starting to soften. Then add half of the batter mix (as above), immediately agitate the mix in the pan for a couple of seconds, as you would an omelette, and then leave to cook. When the batter at the top of Frittata has no movement place the frying pan under the grill and cook until the top has coloured slightly.
Turn out the Frittata.
For the Indian Version:
When the frying pan is hot turn it up to a medium high heat and add 4 Tbsp of oil, add the onions, ginger, garlic, fresh chilli and fry for 1 min minute, WARNING do not allow the ginger and garlic to brown. Then add the half of the batter mix (as above) in which you added the spices into the pan, add the green peas, and immediately agitate the mix in the pan for a couple of seconds, as you would an omelette, and then leave to cook. When the batter at the top of Frittata has no movement place the frying pan under the grill and cook until the top has coloured slightly.
Turn out the Frittata.
You can eat the Frittata on its own but its delicious with a fresh salad and our Apple and Onion Chutney. The recipe for the Apple and Onion Chutney is available on our YouTube Channel : Asif and Cinzia , and check out the dancing and drumming too!
